Types of sunflowers

The variety of sunflowers can be divided into two types of categories: Oilseed and Non-Oilseed
Oilseed
Oil seed sunflowers have typically smaller sized seeds. They are the ones seen munching events, and they are completely black peel. The seed of these varieties are rich in oil content and are generally processed into producing sunflower oil and meal.

II. Linoleic

This type of oil contains linoleic acid, which is an omega-6 acid and is one of two essential fatty acids that our bodies need from food sources.

III. High-oleic

However, High oleic sunflower oil is more expensive and hence not used widely like the Nu Sun oil. However, more of the food industries are moving towards the use and process of high oleic oils.
Much like Nu Sun oil, the high oleic variety oil does not undergo hydrogenation and provides much better stability. High oleic sunflower oil is known for their long shelf life. High oleic sunflower oil can be used in various purposes like making crackers, bakery applications and spray coating oils for cereal and can also be used in creamers that are dairy free.
Non-Oilseed
Non-Oilseed can be used as confections and can be munched by making it a bit salty. They can be detected by their large seeds and having a black and white striped hull. Confection sunflower heads are a bit bigger and have the possibility to be blown away distance by high winds.
Since the demand for confection sunflowers is high, there is also a premium for farmers to grow them. It is more like if you want to take a higher risk, the reward may be higher in farming.
Confection sunflower seeds are divided according to their size and sorted into groups. The largest size goes for the in-shell market. The medium-sized seeds are usually hulled and goes to the kernel market. The smallest size is used for the feeding of bird and pet.
Confections are usually sold for two different purposes: in-shell and kernels or dehulls.
I. In-shell
In-shell is mostly used in confectionaries. They are mostly roasted and put a little salt in the shell and are eaten as snacks. These type of seeds are also transported from the USA to different countries. This is mainly because the seed U.S. grows is known for its large size and better quality throughout. Seeds from the USA are transported to far countries like China, Spain and Turkey. There is also a strong export in the Middle East countries along with some European countries.
II. Kernels or dehulls
Before the process of hulling starts, the medium-sized seeds are processed in order to remove any foreign materials. The segregation of the hull and the kernels takes place with the help of forced air and the natural gravity. After this process is complete, each and every kernel is moved through an electronic device, which throws away every discolored and deformed kernel through sensing mechanically.
